Protein Energy Balls
These protein energy balls are my go to snack for a pre or post workout. I also love these as a mid-day heathy pick-me-up work snack. These small balls are loaded with protein, healthy fat, fiber, and great flavor. Easy to make (no baking required) and delicious to eat! If you’re constantly battling an unhealthy snacking habit or you need to curb your sweet tooth, this recipe will be your new go too!
Ingredients:
1-1/2 Cups rolled oats
1 TBSP Chia seeds
1 TBSP Flax seeds (whole or ground)
1/2 Cup Crunchy peanut butter (Tip: make sure peanuts are the ONLY ingredients!)
1/4 Cup Dark chocolate chips
3 TBSP Honey
1 TSP Vanilla extract
Directions:
1. Place all ingredients in a medium bowl and stir together. Pour ingredients into a food processor or high power blender.
2. Blend ingredients until texture is consistent and well blended.
3. Pour ingredients back into your small bowl. Grab a spoon full and place into your hands, press into a ball shape. Note: balls cannot be rolled, they need to be pressed/ squeezed into a ball shape. Once you get to the bottom of mixture, it may be more dry and can add a little more honey to press the rest into a ball.
4. Place balls on a plate, cover with saran wrap, and put in the fridge for 15-30 minutes for the balls to set. Enjoy!
Note: Balls will last in the fridge for 1 week. You can also store the balls in the freezer and will last up to 3 months. Balls can be kept at room temperature, but will be quite soft.
