Sausage & Apple Stuffed Acorn Squash

A fall favorite! Squash has just the right sweetness which pairs well with a mild sausage. Squash is rich in nutrients, such as, fiber, vitamin C, potassium, and magnesium.

Ingredients:

  1. 2 Acorn squash, cut in half, seeds removed

  2. 1/2 pound Italian chicken sausage, casing removed

  3. 1 Cup red onion

  4. 1 Cup green bell pepper

  5. 1 Clove garlic

  6. 1 Honey crisp apple diced

  7. 2 Cup chopped kale

  8. 1/4 Cup dried cranberries

  9. 1 TSP Oregano, salt, pepper

  10. 1 TSP Olive oil

Directions:

1. Preheat oven to 425 degrees, line baking pan with parchment paper, place halved acorn squash on pan, drizzle with olive oil, sprinkle with salt and pepper. Bake in oven 50-60 minutes until tender with fork.

2. While squash roast, heat olive oil in skillet over medium, high heat. Add sausage and break into smaller pieces and cook until brown 5-6 minutes. Set aside.

3. In the same skillet, add onion, pepper and cook until soft 3-5 minutes, add garlic and cook 30 seconds.

4. Add diced apple, oregano, thyme, salt, pepper and cook for 1 minute, add chopped kale and cranberry and cook 2-3 minutes.

5. Add sausage back to skillet and stir till combine well 1-2 minutes.

6. Fill acorn squash with sausage filling. Set oven to broil, and cook for 5 minutes. Enjoy!
